It’s official… the sun is shinning and the neighbourhood smells of BBQ’d goodness most evenings now. It’s the most wonderful time of the year!
We are fair-weather BBQ’ers at our place, so I get really excited whenever dinner can be grilled instead of having to use the oven. I also just find BBQ’ing to be so much less work and meals just taste better when they are grilled! Last week, we fired up the BBQ a couple of times and one of the recipes we made was by the the easiest and most delicious dinners we’ve had in a long time. You won’t believe how simple this dinner was.
We literally poured a jar of Patak’s Sweet Mango Chutney into a large Ziploc bag, along with a package of chicken drummettes. We sealed the bag and placed it in the fridge for just over an hour. I roasted some potatoes in the oven, threw on a pot of green beans then BBQ’d the chicken that was nicely coated in the Chutney.
And VOILA! Dinner was done in no time flat. The perfect weekday meal and so tasty!! I am a total sucker for meals that take no time at all to prepare. With two little monkeys hanging off my legs, less is more when it comes to how much time I spend cooking at night. I am also particularly fond of dinners that both the adults and kids can enjoy so that I’m not worried about the girls not eating enough before bedtime.
