I made a really yummy dinner tonight that I thought I would share, because it was also super easy and I would go so far as to call it a “quick weekday meal”.  Our 2 year old loved it as well, so I might even call it a “toddler favourite”. 😉

Ingredients

1 1/2  cups of finely sliced red cabbage
1 tbsp. honey
juice from 1 lime
1 medium sized fresh salmon fillet
Extra virgin olive oil
Paprika
Salt
Pepper
Fresh parsley
1 tbsp. Sriracha sauce (or your favourtie hot sauce, but the Sriracha has a special taste to it)
3 tbsp. light ranch dressing
8 flour soft-shelled tacos
Slices of avocado

Step 1:

Preheat oven to 450°. Line a baking sheet with aluminum foil and set aside.

Step 2: The Slaw

1 1/2  cups of finely sliced red cabbage
1 tbsp. honey
juice from 1 lime

Mix together the lime juice and honey until runny.  In a medium sized bowl, drizzle the mixture over the cabbage and toss until coated.

Step 3: The salmon

1 medium sized fresh salmon fillet
Extra virgin olive oil
Paprika
Salt
Pepper
Fresh parsley

Warm the olive oil in a pan over medium-high heat.  Add the salmon fillet skin down and sprinkle with the paprika, salt, black pepper and parsley. Just a pinch of each. Allow to sear for about 1-2 minutes. Flip the salmon and remove the crispy skin.  The skin should peel off fairly easily.  Season this side with the same ingredients mentioned above. Allow to sear about 1 minute.  Transfer the salmon to the lined baking sheet and place in the oven.  Bake for 5-10 minutes until you can flake away pieces with a fork (and it is opaque throughout).

Step 4: The creamy hot sauce

1 tbsp. Sriracha sauce
3 tbsp. light ranch dressing

Mix the Sriracha and ranch sauces together and set aside.

Step 5:  Putting it all together

Warm the tacos in the microwave for 20-30 seconds. Add the salmon, cabbage and some slices of avocado to the tacos. Drizzle with the sauce (except on your toddler’s taco unless they like heat) and enjoy!

    Whoa! I made these tonight in 25 minutes and the girls gobbled them up! Awesome recipe Jess — by far the best fish tacos we’ve ever had and we eat them A LOT! I used halibut which also works well and added some havarti to the tacos. I also added apple cider vinegar, cilantro, and garlic powder to the salw and is was to die for. Thank you for dinner inspiration!

      That’s so great Nicole! I will have to try your modifications. I just loved how quick and easy this was to make and all the flavours. Oh, and that Portia LOVED them too! I think crumbled feta would be yummy in there also. :)

    Have a million people made these yet? We had them again tonight and used kale in the salw and added feta. So good. Both girls loved them!
